The wrong grind can ruin even the best bean. Here's exactly what to use — and why it matters.

There's a reason your coffee sometimes tastes bitter, watery, or just... off. It's usually not the bean — it's the grind. Every brewing method extracts flavour differently. Feed an espresso machine a coarse grind and you'll get a weak, watery shot. Feed a French press a fine grind and you'll end up with a bitter, muddy cup. This guide tells you exactly what grind and what bean to use — for every method.

The classic davara tumbler — South India's most beloved morning ritual.

The South Indian metal filter works by slow drip — water passes through the grounds over 10–15 minutes, producing a thick, concentrated decoction. You need a medium-fine grind, slightly coarser than espresso, to allow water to pass through at the right pace without clogging.

Robusta is the traditional choice here and for very good reason. Its higher caffeine content, dense body and low acidity produce the thick, dark decoction that makes authentic kaapi what it is. If you want some smoothness alongside the strength, the 70-30 blend softens the edges while keeping the body bold.

Brew tip: If your decoction drips too fast and tastes weak, go slightly finer. If it barely drips and tastes bitter, go slightly coarser. Small adjustments make a big difference.

Espresso

A properly pulled espresso shot — golden crema on top, rich and dense.

Espresso demands a fine, consistent grind — think table salt texture. The high-pressure extraction happens in under 30 seconds, so you need maximum surface area for the water to pull flavour efficiently.

Robusta shines in espresso. Its higher oil content produces a thick, persistent crema — that golden layer on top that espresso lovers obsess over. The 70-30 Blend gives you Arabica complexity with Robusta crema — excellent for lattes and cappuccinos where the espresso needs to hold its own against milk.

Brew tip: If your shot pulls too fast (under 20 seconds) and tastes sour, grind finer. If it pulls too slow (over 35 seconds) and tastes bitter, go coarser.

Recommended: 70-30 Arabica-Robusta Blend — thick crema, bold body, smooth enough for milk-based drinks.

Pour over — slow, controlled, and the best way to taste Arabica's full character.

Pour over is where Arabica truly shines. The slow, controlled pour extracts the delicate floral, fruity and caramel notes that Arabica is known for — notes that get overwhelmed in faster, higher-pressure methods. Use a medium-fine grind, roughly coarse sand texture.

Our 100% Arabica Medium Dark Roast is ideal here. The medium dark roast brings out caramel sweetness and a smooth body without the harsh bitterness of a full dark roast — perfect for a slow morning pour.

Brew tip: Pour in slow, steady circles starting from the centre. Let the grounds bloom (absorb water) for 30 seconds before your main pour — this releases CO₂ and opens up the flavours.

French Press

French press — full immersion, full body, full flavour.

French press is full immersion brewing — the grounds sit in hot water for 4 minutes before you press the plunger. This demands a coarse grind, like rough sea salt. Fine grounds over-extract in 4 minutes and also push through the metal filter into your cup.

Arabica works beautifully here. The longer steep draws out its natural sweetness and complexity. Our 80-20 Blend is also excellent — the Robusta adds just enough body and depth to make the cup feel substantial without overwhelming the Arabica's character.

Brew tip: Use water just off the boil — around 92–96°C. Boiling water (100°C) scorches the grounds and creates unnecessary bitterness.

Moka Pot

The moka pot — stovetop espresso, Italian-style, Indian soul.

The moka pot forces pressurised steam through the grounds — not quite espresso pressure, but close. Use a medium-fine grind. Too coarse and the coffee will be weak and watery. Too fine and you risk clogging the filter basket.

Robusta handles the moka pot's intense heat and pressure brilliantly — strong, rich, with good body. The 70-30 Blend softens it slightly while keeping the intensity.

Brew tip: Don't pack the grounds tightly like espresso — fill the basket level and leave it loose. Remove from heat the moment you hear the coffee start to gurgle.

Recommended: 70-30 Arabica-Robusta Blend — intense enough for the moka pot, smooth enough to drink straight.

Cold Brew

Cold brew — smooth, low-acid, naturally sweet. Perfect for Chennai summers.

Cold brew is steeped in cold water for 12–24 hours — the extra long contact time means you need an extra coarse grind, even coarser than French press, to avoid over-extraction and bitterness.

Arabica produces a naturally smooth, slightly sweet cold brew with incredibly low acidity. Starting with a naturally low-acid bean like our Arabica Medium Dark Roast gives you an exceptionally smooth result — ideal for Chennai's heat.

Brew tip: Use a ratio of 1:8 coffee to water for concentrate (dilute before drinking) or 1:15 for ready-to-drink cold brew. Steep in the fridge for cleaner, clearer flavour.
